Ingredients
2 ripe bananas, mashed (about 220g)
⅓ cup melted butter (75g)
½ cup granulated sugar (100g)
¼ cup brown sugar (50g)
2 large eggs, room temperature
½ cup buttermilk (120g)
1½ teaspoons vanilla extract
1½ cups all-purpose flour (180g)
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
Mini chocolate chips, as much as you like!
Directions
Preheat the oven to 425°F and line a 12-count muffin pan.
Mash the bananas, then mix in the melted butter, granulated sugar, and brown sugar.
Add the eggs, buttermilk, and vanilla. Mix until combined.
In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
Add the dry ingredients to the wet ingredients and gently mix until mostly combined. Don’t overmix.
Fold in the mini chocolate chips.
Let the batter rest for 15 minutes.
Fill the muffin liners almost to the top and sprinkle extra chocolate chips on top.
Bake at 425°F for 5 minutes.
Without opening the oven, reduce the temperature to 350°F and bake for another 13–15 minutes, or until a toothpick comes out with just a few moist crumbs.
Let cool slightly and enjoy!
Why Start at 425°F?
Starting the muffins at a higher temperature helps give them those taller, bakery-style tops.
After 5 minutes, lowering the oven to 350°F lets the centers finish baking without over-browning the outside.
A Few Notes
Use bananas that are very ripe for the best flavor and sweetness.
Be careful not to overmix the batter once you add the flour. Gently mixing helps keep the muffins soft and fluffy.
I used mini chocolate chips, but regular chocolate chips will work too.
And yes — I fully support measuring the chocolate chips with your heart. 😂
