Easy Cheesy Taco-Stuffed Shells

If your family loves tacos AND pasta, you have to try these Cheesy Taco-Stuffed Shells!

Jumbo pasta shells are stuffed with a creamy taco-seasoned beef mixture, topped with enchilada sauce and plenty of cheese, and baked until everything is hot and melty.

This is one of those easy family dinners that feels a little different from regular taco night but still uses simple ingredients everyone already loves. I served ours with Mexican rice, and it made such an easy dinner!

Ingredients

  • 20–24 jumbo pasta shells

  • 1 lb ground beef

  • 1 packet taco seasoning

  • Water as directed on taco seasoning packet

  • 8 oz cream cheese

  • 1 cup salsa

  • 1 can (10 oz) red enchilada sauce

  • 2 cups shredded Mexican-blend cheese


Optional for Serving

  • Mexican rice

  • Sour cream

  • Guacamole

  • Sliced green onions

  • Diced tomatoes

  • Extra salsa

  • Your favorite taco toppings


Directions

  1. Preheat the oven to 350°F.

  2. Cook the jumbo pasta shells according to the package directions. Drain and allow them to cool enough to handle.

  3. While the shells are cooking, brown the ground beef in a large skillet over medium heat. Drain any excess grease.

  4. Add the taco seasoning and the amount of water called for on the seasoning packet. Stir and simmer according to the packet directions.

  5. Add the cream cheese and salsa to the seasoned beef. Cover the skillet briefly to help soften the cream cheese, then stir everything together until the mixture is creamy and well combined.

  6. Pour enough enchilada sauce into the bottom of a 9×13-inch baking dish to lightly coat the bottom.

  7. Fill each cooked pasta shell with the creamy taco beef mixture and arrange the shells in the baking dish with the open side facing up.

  8. Pour the remaining enchilada sauce over the stuffed shells.

  9. Sprinkle approximately 2 cups of shredded Mexican-blend cheese evenly over the top.

  10. Bake uncovered at 350°F for approximately 15-20 minutes, or until the shells are heated through and the cheese is completely melted.

  11. Serve warm with Mexican rice and any of your favorite taco toppings!


A Few Notes

You can easily customize these with whatever taco toppings your family likes.

I served ours with Mexican rice, but you could also serve them with a simple salad, chips and salsa, or beans.


Since the beef and pasta are already cooked before the shells go into the oven, you’re really just baking them long enough to heat everything through and melt the cheese. If everything is hot and bubbly before 25 minutes, they’re ready!
